Home-made chicken broth is a gourmet "happening":  you now have the makings for dozens of quick, delectable soups and sauces! Here are three recipes to get you started.

Stracciatella (Italian Egg Drop Soup)

Ingredients 
  • 4 cups chicken broth (lightly salted)

  • 3 large eggs

  • 2 Tbsps finely grated, lightly packed Parmesan cheese

  • 2 Tbsps soft breadcrumbs

  • Pinch of freshly ground black pepper

  • A handful of tender greens, such as beet, chard, baby kale, spinach

 

1 Place stock in a 2-quart saucepan and bring to a simmer.

2 In a medium bowl whisk together the egg, Parmesan cheese,  breadcrumbs, and black pepper.

3 Once the stock is simmering, stir in the greens, cook until nearly done.

4 Pour/scrape the cheese egg mixture into the simmering stock. After a few seconds, stir the egg mixture into the soup.  Cook at a gentle simmer for another minute, and serve with a smile!

 

VARIATION: cut-up chicken, cooked rice and lemon can be added to this soup for a version of Greek Avgolemono soup.

Polish Sauerkraut Soup

2 quarts chicken broth

•3 cups drained sauerkraut

•1 cup reserved sauerkraut brine

•1 lb.chorizo, sliced into ¼-inch slices

•4 ounces slab bacon, finely diced

•4 green serrano chiles, stemmed, seeded, and thinly sliced

•2 sweet onions, diced

In a large pot over medium-high heat, combine the broth, sauerkraut and brine, chorizo, bacon, mushrooms, serrano chiles, bell peppers, onions, apricots and potatoes, and bring to a simmer. Cover and adjust the heat to medium low and cook 30 minutes.

Sauce Allemande

•3 Tablespoons butter or schmaltz

•3 Tablespoons flour

•2 cups chicken stock

•Salt and pepper

•3 egg yolks

In a saucepan, over medium heat, melt the butter. Stir in the flour and cook for 2 minutes. Whisk in the stock, 1/2 cup at a time, until smooth. Season with salt and pepper. Bring the liquid to a boil and reduce the heat to low. Simmer for about 45 minutes, whisking occasionally, until it is reduced by half. Remove from heat and cool slightly. Add 3 egg yolks, one at a time, and quickly whisk each one until incorporated. Use immediately, as it cannot be reheated. Delicious with poultry, white beans, potatoes, grains, and vegetables such as mushrooms, carrots, greens, and cruciferous vegetables.
